Our Grass-Fed Mission

As a sustainable restaurant, the quality of our meat is at the forefront of our green efforts. Not only is grass-fed meat better for the environment, it’s proven to be better for our health than its conventional counterpart. Which is why our beef is sourced exclusively from Silver Fern Farms in New Zealand.

Silver Fern Farms produces some of the most high-quality meat in the world. They’re driven by a “plate-to-pasture” method, which focuses on a reliable and sustainable chain of care from the farm to the consumer. According to their website, the plate-to-pasture strategy is focused on driving up the value chain, to achieve higher returns for our products. This in turn will allow them to be more profitable and pay premiums to suppliers for livestock which meet the criteria for these higher returning products – profitably linking the plate to the pasture. The result is a low carbon footprint, sustainable business method, and unbelievably delicious meat.

If this isn’t enough to convince you, the health benefits of grass-fed beef deserve to be mentioned. Grass-fed beef has a lower fat content, more essential vitamins, antioxidants, and is infinitely less likely to carry “super bugs;” bacteria that have become resistant to three or more classes of antibiotics. The quality of life of the cows not only correlates to the nutritional quality of the beef, but also the taste. Which is why our espresso-crusted beef tenderloin is one of the most tender, delicious, and nutritious dishes on the Taranta menu. Paired with a sweet potato puree (it’s the perfect complement on the palette to the espresso crust), it’s a can’t-miss option on the menu.
