“Sustainability is a process, not a simple change.”

As a part of our continuing effort to become more Eco-friendly we support sustainable seafood, grass fed, all natural antibiotic-hormone free beef, all natural poultry, natural and biodynamic wine, and local produce when possible. We are also promoting the importance of traceability and the relationships we build with our producers in order to provide our guests with plenty of information about the products we serve.

In January 2015, our staff traveled to Peru and visited the Region of Ica, where Pisco is produced. We were fortunate to meet Master Distiller, Johnny Schuler, from Pisco Porton bringing great ideas to our restaurant to eventually craft a collection of house-infused piscos.
