Chef Duarte served a Paiche Amazone with green quinoa, fiddlehead ferns, pickled ramps with a squid ink QR code that when scanned will lead to a page explaining hos sustainable this particular dish was. The event had 50 participating restaurants from the Houston Area, plus other Chefs from the US.
